Filette, one of Italy's premium waters, made its debut in America at the Fancy Food Show in New York City in July. The Italian water that has been bottled from the same source in the Guarcino region of Central Italy sine 1894 comes in natural, slightly sparkling and sparkling and is expected to be available in fine restaurants across the country beginning this fall. The source of the water has ben renowned since 400 BCE--it takes a minimum of two decades for melted snow and rain to filter from the Apennine Mountains, which are 900 meters tall, to the source--and because it comes from a ground source, the water quality varies less, says the company, and has a more consistent taste than other premium water.
