Hillrock Distillery to Release Double Cask Rye

New York State field-to-glass spirits producer Hillrock Estate Distillery will introduce Double Cask Rye Whiskey this September. The rye whiskey, the company says, reflects the unique terroir of New York’s historic Hudson Valley.

“Inspired by fine estate vineyards, we control every aspect of production from growing our own grain organically, to traditionally floor malting, pot distilling, aging and bottling all by hand on the estate” says Jeffrey Baker, owner Hillrock Estate Distillery. “This has proven to be a recipe for success, as the unique characteristics of our farm are distinctly expressed in our award winning whiskeys and people continue to ask for more.” 

Hillrock Double Cask Rye is handcrafted in small batches using Hillrock's organically grown, estate rye. The double cask aging process extracts additional caramel and vanilla from the oak to balance out the traditional rye spices present in the whiskey. The second cask aging occurs in a No. 4 charred barrel crafted from American white oak which was seasoned for over two years before assembly. This char offers extra extractable vanilla and caramelized wood sugars, while the air seasoning eliminates bitter tannins which can be present in kiln dried oak.

“We chose the Double Cask aging process to balance the spicy rye notes with a mellow sweetness,” says Master Distiller Dave Pickerell. “Our rye whiskey clearly expresses Hillrock’s signature clove and cinnamon flavors, along with traditional rye spices complemented by mint, caramel and butterscotch.”

Released in limited single cask allotments, the Double Cask Rye will be available in New York spirit shops and fine drinking establishments on Sept. 24, 2013. In addition to the Double Cask Rye, Hillrock’s portfolio of fine handcrafted whiskies include Solera Aged Bourbon, Estate Single Malt and George Washington’s Rye Whiskey, Estate Edition.

The Hillrock team will host an anniversary open house at the distillery on Saturday, September 21 from noon to 5pm. The event, which is open to the public, will offer enthusiasts the opportunity to tour the award winning field-to-glass facility, sample the entire portfolio of spirits, and purchase Hillrock Estate Distillery products directly from the producers.
